Blind Summit, Caol Ila 9 Year Old 2015 Tawny & Olorosso Finish – 55.6%

1 of 145 bottles made.

NOSE
Ashy, sweet bacon, stewed pear, cured meat, herbal dried berry, fruity smoke, coal dust, pepper, candied pear & sea spray.

PALATE
A touch of nuttiness and leafy berries, then sweet rounded bonfire smoke.

PRODUCTION
Ex bourbon barrel Caol Ila, finished for 6 months in a combination of the two 30L casks that had previously held our 22 year old Tawny finish Cameronbridge, and one 30L cask that had held 1982 Oloroso finished Secret Speyside. The resulting Single Malt is a mash up of delicate berry, nutty notes with a core of bourbon barrel Caol Ila smoke. Multi-cask.

Blind Summit Whisky is a Leith-based passion project by two friends, James & Jamie. An independent whisky bottler focussing on exciting, brightly labelled, flavourful whiskies. It’s a bit more like the whisky equivalent to Gypsy Brewing with selection, maturation and bottling being carried out in different locations depending on which friendly warehouse is available. This release they bottled by hand on April 1st and labelled on April 18th.

Each release is under 250 bottles so they are always limited and often sell out quickly.

Each outturn uses a different local artist to design an original art piece for the label. This release, Outturn II, features original artwork by Liam Palermo, based on a photograph of the Three Sisters Munros, taken by co-founder James, and created in a Japanese Anime style.
